Chef and owner Melvin Lopez was happy to pass along the recipe for Ceviche de Camaron or Shrimp Ceviche Cocktail. Ola’s Nuevo Latino cuisine is a splashy, exuberant culinary form that celebrates Latin heritage and spirit.
I have seen ceviche also spelled seviche and cebiche, depending on the dish’s country of origin. Although ceviche is a fairly new dish on menus today, the preparation dates back to centuries ago. In ceviche, the acid of the juices from citrus fruits cooks the fish, rather than heat.
